The milder version of Babitha's Fish Curry.
500g fish
For marinade:
1 tsp turmeric powder
1 tsp ginger/ garlic paste
Salt (to taste)
For curry:
2 tbsp oil
2 medium onions
2 chillis
2 cloves garlic
3 tomatoes
1 tsp turmeric powder
2 tsp coriander powder
1/2 tsp chilli powder
1/2 tsp garam masala
400ml coconut milk
1. Marinate fish and leave to sit for minimum of 3 minutes.
2. Finely chop onions, chillis, garlic and tomatoes.
3. Shallow fry the fish until 3/4 done.
4. Heat oil in a saucepan.
5. On medium heat, cook onions, chilli and garlic until golden brown.
6. Add turmeric powder, coriander powder, chilli powder and garam masala. Turn heat to low and cook for 2 minutes.
7. Add tomatoes and cook until the mix forms a paste, stirring regularly.
8. Add salt and coconut milk.
9. When the curry starts to boil, add fried fish and cook until the curry has thickened.
