Fluffy American Pancakes

Fluffy pancakes- what could be a better breakfast treat?




Recipe from here.
Serves 4-6 (or 2-4 very hungry) people.

135g plain flour
1 tsp baking powder
1/2 tsp salt
2 tbsp caster sugar
130ml milk
1 large egg, lightly beaten
2 tbsp melted butter (allowed to cool slightly) + extra for cooking

1. Sift the flour, baking powder, salt & caster sugar into a large bowl & combine.
2. In a separate bowl, lightly whisk together the milk & egg, then whisk in the melted butter.
3. Pour the milk mixture into the flour mixture & use a fork to beat until you have a smooth batter. Any lumps will soon disappear with a little mixing.
4. Let the batter stand for a few minutes.
5. Cook the pancakes. When the top of the pancake begins to bubble, turn it over & cook until both sides are golden brown & the pancake has risen to about 1cm thick.
6. Serve as you wish!
