Cake was a fail (unfortunately), but the cream was to die for-
It tasted exactly like McDonald's ice cream!

For a 3 layered 8" cake (frosting to cover whole cake),
2 1/2 cups (720ml) heavy whipping cream, cold
1 1/2 cups (173g) powdered sugar
2 tsp vanilla extract
16 oz (452g) mascarpone cheese, chilled
1. Add the heavy whipping cream, powdered sugar & vanilla extract to bowl & whip on high speed until soft peaks form.
2. Add the mascarpone cheese to the whipped cream & whip until stiff peaks form.
3. Set whipped frosting in refrigerator.
*I only used 600ml heavy cream cuz I wasn't frosting the sides, & adjusted the rest of the ingredients accordingly.
